1 cup unsweetened cocoa, preferably organic and fair trade, such as lake champlain
3 cup flour
2 cup sugar
2 1/3 cup warm water
2 teaspoon baking soda
1 1/2 teaspoon salt
1 1/4 cup melted butter
2 tablespoon vinegar
2 teaspoon vanilla

Directions

Preheat the oven to 350 degrees.
Mix all of the dry ingredients together in a large bowl. Stir in the wet ingredients. Beat until smooth. Butter a tube cake pan and dust with flour. Bake for 1 hour or until toothpick is removed dry.
