Ingredients are sourced as locally as possible with items like Queen Creek olive oil, Mesa Farms goat cheese, Sunizona heirloom tomatoes, Mount Hope dried berries, and Arizona grass-fed beef. The menu is fresh with fan favorites of bacon-wrapped Buffalo tenderloin with mole oaxaqueño, foie gras, cherries; Chilean sea bass with a pecan-herb crust; mussels, clams, and smoked–tomato consommé; vegan pappardelle wild mushroom ragout, walnut gremolata, rapini, and coconut milk alfredo. You can choose to dine indoors or alfresco under the Sonoran stars. It is truly breathtaking.
Proof
Proof is a Wild West canteen for today's crowd. Craft beer and cocktails are flowing while fun-loving patrons enjoy a game of shuffleboard. The menu is filled with home-style comfort foods like shrimp and grits, chicken and waffles, and house-made ice cream sundaes. They even have a soda jerk station.
