Halibut is a lean fish and can easily become overdone and dry since fish must be cooked to an internal temperature of at least 145 degrees Fahrenheit to ensure food safety.
Seasonal availability is a major determinant of quality. Halibut is most readily available from mid-March through mid-November and has the freshest flavor when ordered in season.
