What Makes Kentucky Potatoes Unique?

Kentucky potatoes combine diced potatoes, cheese, sour cream, cream of potato or chicken soup, bell peppers, onions, and common spices in a slow cooker for a creamy result.
The casserole's easy preparation and simple ingredient list may remind you of pan-fried potatoes O'Brien, which also typically come with diced bell pepper and onion.
However, although Kentucky potatoes may sound similar, this recipe uses ingredients that help to transform it into a new-to-you cheesy, creamy dish.
Each variation of this dish has three things in common: the base is a riff on potatoes O'Brien, it has the addition of cheese and sour cream, and it's made in a slow cooker.
As long as it has these three features, it's considered Kentucky potatoes, and once it's done cooking in a slow cooker, you can enjoy it with another layer of cheese.
