Chili with chicken is a great substitute for the traditionally beef-laden dish, and you can pack some extra punch by slipping in some green enchilada sauce.
Green enchilada sauce is usually paired with enchiladas, but its bright, fresh acidity and chile-forward spice make it an excellent addition to a chicken chili dish.
Using this tomatillo-packed sauce instead of (or alongside) chicken stock will also add a fresh, tangy flavor to your chili and lighten the heaviness of the dairy.
Instead of overpowering the mild flavor of chicken, it will accentuate the flavor of the protein while cutting through the richness of other ingredients in the recipe.
To make your own sauce, simmer down tomatillos with other ingredients such as peppers, onion, and chicken stock before blending it to a smooth, pourable consistency.
