Slow Cooker Pulled Pork

Ingredients
  • 1 cup ketchup
  • 1 tablespoon sweet chile sauce
  • 1 tablespoon honey
  • 1/2 tablespoon spicy brown mustard
  • 1 tablespoon rice wine vinegar
  • 1 cup soy sauce
  • 3 garlic cloves, minced
  • 1 tablespoon crushed red pepper flakes
  • 1 large yellow onion, roughly chopped
  • 4 pound pork butt, trimmed
  • 1 bottle dark beer
Directions
  1. Add the ketchup, chile sauce, honey, mustard, vinegar, soy sauce, garlic, and red pepper flakes to a sauce pan over medium heat. Whisk the mixture together and let it come to a gentle boil, then remove the sauce from the heat and let it cool slightly.
  2. Meanwhile, line the bottom of the slow cooker pot with chopped onion and rest the pork on top, then cover the meat with the sauce and turn it once to make sure everything is covered. Pour the beer over the meat and cover the pot. Cook on low for 9 hours.
  3. When the pork is done cooking, carefully remove it from the pot and place it on a cutting board. Using two forks, gently pull the meat into shreds. Serve immediately.
