- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 lime, sliced into wedges
- 1/2 white onion, sliced
- 1 summer squash, sliced
- 1 zucchini, sliced
- 4 medium flour tortillas
- shredded cheddar cheese
- a dash of fine sea salt
- olive oil
- In a saute pan cook each vegetale separately with a tablespoon of olive oil and a dash of fine sea salt.
- In another pan fry the tortillas lightly on each side.
- Top each fajita with cheese and a pinch of salt to taste.
- Serve with your choice of salsa.
