Vegan Black Bean Chili

Ingredients
- 1/4 cup coconut oil
- 3/4 cup onions, chopped
- 4 cloves garlic, minced
- 1/4 cup diced tomatoes
- 1/4 cup bell pepper, finely chopped
- 1/4 teaspoon cayenne powder
- 1/4 teaspoon chili powder
- 1 tablespoon fresh cilantro
- 2 cup vegetable broth
- 2 cup water
- 2 1/2 cup black beans
- 1 1/2 cup cooked chickpeas
- 1/4 cup kale
Directions
- In large pot melt oil on medium heat. Add onions garlic and cook for 3-5 minutes, stirring occasionally. Add bell pepper and tomato and cook another 1-2 minutes. Add cayenne, chili, cilantro. Add broth, water and beans. Bring to gentle dinner and cook uncovered 25 minutes. Add kale, cook another 5 minutes. Serve. Salt & pepper to taste.
