Ingredients
- 4 (2.6 ounce) pouches of tuna, such as starkist kid's tuna creation bacon ranch
- 1/3 cup plum tomato, diced
- 1/4 cup white onion, finely chopped
- 2 tablespoon cilantro, fresh, chopped
- 1/2 teaspoon cumin
- 1/4 teaspoon oregano
- 1 tablespoon jalapeno, chopped
- 8 slices multi grain bread
- 4 teaspoon unsalted butter, softened
- 4 slices pepper jack cheese
- 1 avocado
Directions
- Combine the tuna, tomato, onion, cilantro, cumin, oregano and jalapeño pepper in a medium bowl.
- Place four slices of bread on a work surface. Top each with the cheese, avocado and tuna mixture. Set the remaining slices of bread on the tuna. Brush the outside of each sandwich with the melted butter.
- Heat a large nonstick skillet over medium. Add 2 sandwiches, cover the pan and cook until lightly golden, 2 1/2-3 minutes. Turn over and cook until golden and the cheese has melted, about 2 1/2-3 minutes longer. Repeat with the remaining 2 sandwiches.
