Ingredients
  • 4 (2.6 ounce) pouches of tuna, such as starkist kid's tuna creation bacon ranch
  • 1/3 cup plum tomato, diced
  • 1/4 cup white onion, finely chopped
  • 2 tablespoon cilantro, fresh, chopped
  • 1/2 teaspoon cumin
  • 1/4 teaspoon oregano
  • 1 tablespoon jalapeno, chopped
  • 8 slices multi grain bread
  • 4 teaspoon unsalted butter, softened
  • 4 slices pepper jack cheese
  • 1 avocado
Directions
  1. Combine the tuna, tomato, onion, cilantro, cumin, oregano and jalapeño pepper in a medium bowl.
  2. Place four slices of bread on a work surface. Top each with the cheese, avocado and tuna mixture. Set the remaining slices of bread on the tuna. Brush the outside of each sandwich with the melted butter.
  3. Heat a large nonstick skillet over medium. Add 2 sandwiches, cover the pan and cook until lightly golden, 2 1/2-3 minutes. Turn over and cook until golden and the cheese has melted, about 2 1/2-3 minutes longer. Repeat with the remaining 2 sandwiches.
