- 1 pound lean ground turkey or beef
- 1 (1-ounce) package taco seasoning mix
- 1 cup shredded lettuce
- 1 (14-ounce) jar salsa, such as rojo’s restaurant style salsa
- 1 cup canned black beans, drained
- 1 cup mexican-style shredded cheese
- tortilla strips, to garnish
- In large skillet, prepare beef or turkey with taco seasoning mix according to package directions; set aside. Meanwhile, on four large plates, layer ¼ cup of lettuce and salsa, 1/4 cup black beans and ¼ cup cheese. Top with cooked taco meat. Garnish with sour cream and tortilla strips as desired.
