Strawberry Tofu Cheesecake

Ingredients
1 1/2 cup graham cracker crumbs
7 tablespoon coconut oil, melted
1 package tofu, such as house foods premium tofu soft
8 ounce cream cheese, softened
1 cup strawberries
1/2 cup sugar
strawberries, for garnish
Directions
Preheat oven to 350 degrees.
In a bowl, mix graham crackers and melted coconut oil until combined.
Pour mixture into pie crust and bake in a 350 degrees oven for 10 minutes or until golden brown. Set aside to cool.
Allow House Foods Soft Tofu to sit out while preparing crust. Drain excess liquid.
In a food processor, blend soft tofu, strawberries, sugar, and cream cheese together. Pour filling into cooled piecrust.
Chill in the refrigerator for at least 4 hours. Top with strawberries for garnish before serving.
