Pretty in pink and with a lovely strawberry flavor, these light doughnuts use a pancake batter for extra fluffiness. A milky cream cheese glaze helps catapult this breakfast dish to sweet, sweet heaven.This recipe is courtesy of Krusteaz.

Ingredients
  • 4 ounce cream cheese, softened
  • 1/2 cup powdered sugar
  • 5 tablespoon milk
  • 2 cup pancake mix, preferably krusteaz buttermilk pancake mix
  • 1 1/3 cup cold water
  • 2 tablespoon strawberry extract
  • pink food coloring
Directions
  1. In a small mixing bowl, beat or whisk cream cheese and powdered sugar until smooth.
  2. Add in milk 1 tablespoon at a time and beat until it is the consistency of a thick glaze.
  3. Cover and set aside.
  4. Heat pancake griddle maker until ready; or if using donut pan, oven to 350 degrees F.
  5. Stir pancake mix, cold water, and strawberry extract together with a wire whisk.
  6. Stir in a few drops of pink coloring and let batter sit for 2 minutes.
  7. Fill pancake griddle or donut cavities with batter and bake 5–6 minutes. Tip: use a 1/4 cup and small spatula to pour mix into cavities.
  8. Gently remove from donut maker or pan.
  9. Once cooled, dip in cream cheese glaze and serve.
