Ingredients
  • 1 (12-ounce) can spam classic, diced
  • 2 tablespoon canola oil
  • 1 onion, finely chopped
  • 2 large baking potatoes, peeled and diced
  • 1/2 red bell pepper, chopped
  • 1/2 green bell pepper, chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 teaspoon freshly ground pepper
Directions
  1. Step 1: In 10-inch cast-iron skillet, heat 2 tablespoons oil over medium heat.
  2. Step 2: Cook 1 finely chopped onion for 3 minutes or until translucent.
  3. Step 3: Add 2 diced potatoes and cook for 7 to 10 minutes or until golden.
  4. Step 4: Stir in 1 can of SPAM Classic, 1/2 chopped red and green bell peppers and cook until heated through and browned.
  5. Step 5: Stir in 1/4 cup chopped parsley and 1/4 teaspoon pepper.
