Shredded Carrots With Tahini Dressing

Ingredients
  • 1/4 cup lemon juice
  • 1/4 cup tahini
  • 1/4 cup olive oil
  • 2 garlic cloves, minced
  • salt, to taste
  • pepper, to taste
  • 3 pound carrots, shredded
  • 2 tablespoon parsley, chopped
Directions
  1. In a bowl, whisk together lemon juice, tahini, olive oil, garlic, salt, and pepper.
  2. Toss the shredded carrots with dressing and add parsley right before serving.
