Scrambled Eggs With Smoked Salmon

Ingredients
  • 8 large eggs
  • 3 tablespoon water
  • 1 tablespoon freshly chopped chives
  • salt
  • freshly ground black pepper
  • low-calorie cooking spray
  • 6 ounce smoked salmon
  • lemon wedges, for garnish
  • chive leaves, for garnish
Directions
  1. In a medium bowl, beat the eggs, water and, chives. Season to taste with salt and pepper.
  2. Spray a medium ceramic or nonstick skillet with low-calorie cooking spray and place over medium-low heat.
  3. Pour in the eggs and cook, stirring frequently, until softly scrambled.
  4. Place a piece of smoked salmon on each of 4 plates and spoon the scrambled eggs alongside.
  5. Serve immediately with lemon wedges and chive leaves, if desired.
