Is there anything more romantic than starting your Valentine’s Day off by serving your love breakfast in bed? Scrambled eggs are easy enough that anyone can make them, but the dish will feel fancy with the addition of chives and smoked salmon.This recipe is courtesy of Slimming World.

Ingredients
- 8 large eggs
- 3 tablespoon water
- 1 tablespoon freshly chopped chives
- salt
- freshly ground black pepper
- low-calorie cooking spray
- 6 ounce smoked salmon
- lemon wedges, for garnish
- chive leaves, for garnish
Directions
- In a medium bowl, beat the eggs, water and, chives. Season to taste with salt and pepper.
- Spray a medium ceramic or nonstick skillet with low-calorie cooking spray and place over medium-low heat.
- Pour in the eggs and cook, stirring frequently, until softly scrambled.
- Place a piece of smoked salmon on each of 4 plates and spoon the scrambled eggs alongside.
- Serve immediately with lemon wedges and chive leaves, if desired.
