Ingredients: 4 raspberries, muddled; 1/2 ounce light simple syrup; 1/2 egg white; 3/4 ounce campari; 3/4 ounce fresh lemon juice; 1 1/2 ounce london dry gin; 1 dash of angostura bitters, to garnish

Just in time for the Chinese New Year, the Scarlet Snake cocktail is made by Jessamine McLellan, the lead bartender at Hakkasan.

Ingredients

4 raspberries, muddled
1/2 ounce light simple syrup
1/2 egg white
3/4 ounce campari
3/4 ounce fresh lemon juice
1 1/2 ounce london dry gin
1 dash of angostura bitters, to garnish

Directions

Combine ingredients. Shake and double-strain into a coupe, garnish with a dash of Angostura bitters.
