- 1. Combine shrimp, jalapeno, shallot, cilantro, lime, tomato, horseradish, & evoo in mixing bowl and season with salt & pepper
- 2. Mark 1/4 of an avocado on grill and medium dice, gently fold into mixing bowl of ingredients
- 3. Pour into serving dish, place toast points
- 4. Remove all pith and skins from grapfruit, segment and cut segments in half, place centered on dish
- 5. Garnish with chive
