Red Enchilada Chile Sauce made slightly smoky and spicy with the addition of chipotles in adobo sauce.

Ingredients
- 3 roma tomatoes
- 1 clove garlic
- 1/2 cup chicken, beef or vegetable stock
- 1/2 red onion
- pinch mexican oregano
- 1 chipotle in adobo sauce + 2 teaspoons sauce
- 1 teaspoon fresh lime juice
Directions
- 1. Place all ingredients in a blender or food processor. 2. Process until smooth. 3. Place the sauce in a pan over medium heat and bring to a boil. 4. Reduce heat and allow to simmer until the sauce has the consistency of a thick pasta sauce.
