3/4 cup quaker oats, quick or old-fashioned, uncooked
1 egg or 2 egg whites, lightly beaten
1/4 cup chopped onion
1/2 teaspoon salt
1/4 teaspoon black pepper
Directions
Preheat the oven to 350 degrees.
In a large bowl, combine all of the ingredients, mixing lightly but thoroughly. Press into an 8-by-4-inch loaf pan.
Bake for 1 hour to medium doneness (a thermometer inserted in the center should read 160 degrees) or until not pink in the center and juices run clear. Let stand for 5 minutes and drain off any juices before slicing.
