1 cup raw pumpkin seeds, soaked in water for four hours
2 1/2-3 cup filtered water
2 teaspoon agave syrup
1-1/2 cup chilled pumpkin seed milk (see recipe above)
3 tablespoon frozen pumpkin purée
1/4 cup frozen cranberries
1/2 teaspoon pumpkin pie spice
2 tablespoon chia seeds, soaked in water for 10 minutes
dash of sea salt
1 teaspoon vanilla extract
1 teaspoon lucuma powder
honey to taste
Directions
Combine all ingredients in a blender and blend for 1-2 minutes, depending on your blender, until smooth and creamy. You can strain if you wish, but you will strain out a lot of the pumpkin seeds’ nutrients. Refrigerate in a mason jar for up to three days.
