- 1 rotisserie chicken, skin removed and chopped
- 1 stalk celery, chopped
- 1/2 small onion, chopped
- 1 teaspoon porcini poultry r.u.b.s.*
- 1/2 teaspoon fresh thyme
- 1/2 cup mayonnaise
- dash of sea salt
- iceberg or bibb lettuce
- oat or multi-grain bread
Directions
- Place chicken in a medium size bowl and add the remaining ingredients. Mix gently and season with salt to taste. If too dry, add a little more mayonnaise. Serve on your favorite grainy bread with lettuce.
