Pickled Mango Radish Slaw
Total time: 20 minutes
Ingredients
  • 1 medium mango, peeled
  • 8 radishes
  • 1/2 fresh poblano chile, seeded
  • 1/2 cup rice vinegar
  • 2 tablespoon sugar
  • 2 tablespoon mccormick mixed pickling spice
  • 1/4 teaspoon salt
Directions
  1. Cut mango, radishes and poblano into julienne strips.
  2. Place in large glass bowl.
  3. Set aside.
  4. Place remaining ingredients in small saucepan.
  5. Bring to simmer on medium heat, stirring to dissolve sugar and salt.
  6. Reduce heat to low; simmer 5 minutes.
  7. Let stand 5 minutes to cool.
  8. Strain over fruit mixture.
  9. Discard spices.
  10. Refrigerate 1 hour or until cooled.
  11. Serve.
  12. Or, cover and refrigerate until ready to serve.
