Ingredients
  • 1 1/2 pound oxtails
  • 2 tablespoon pickapeppa soy sauce
  • one 14.5-ounce can chicken or beef stock
  • 1/4 cup red wine
  • 2 cloves of garlic
  • 1 teaspoon soy sauce
  • 1 teaspoon scotch bonnet pepper, minced
  • 3 tablespoon brown sugar
  • 1/4 teaspoon freshly ground pepper
  • 1/4 teaspoon ground anise
  • 1/4 cup carrot, diced
  • 2 whole scallions, chopped
  • 1/2 cup mango purée
  • 3 sprigs of fresh thyme
  • 3 slices fresh ginger
  • 2 tablespoon salt
  • 2 sheets puff pastry
Directions
  1. In a pan, sear and brown oxtail for 3-5 minutes.
  2. In a stewing pot, pour in chicken stock, Pickapeppa soy sauce, red wine, garlic, brown sugar, carrots, anise, mango purée, Scotch bonnet pepper, and ginger slices.
  3. Stir to mix the ingredients together.
  4. Bring to a boil and then reduce to a simmer.
  5. Add the seared oxtail to the pot. Put the lid on top and allow to cook on a low heat for 2-3 hours until tender. The meat should be fall-off-the-bone tender when pierced with a fork.
  6. Remove oxtail from sauce. Debone the meat and chop roughly into small pieces, then stir into the sauce and set aside to cool.
  7. The oxtail filling is now ready to be put into the puff pastry circles.
  8. Preheat oven to 370 degrees F.
  9. Take pre-made puff pastry sheet and lay it on floured table or cutting board.
  10. Cut out 3-inch circles.
  11. Place a heaped tablespoon of the meat filling onto one side of the circle.
  12. Fold the circle in half and press a fork along the pastry’s edges to seal. Gently use fork to pierce top of pastry to allow steam to exit.
  13. Continue until all dough circles and filling are used up.
  14. Place in a single layer on baking sheet and brush with egg wash and cook in preheated oven till the pastries begin to become golden brown (about 20 minutes).
  15. Place patties on a platter and garnish with baby greens. Enjoy!!!
