Oven-Roasted Rosemary Potatoes

Ingredients
- 2 sweet potatoes, sliced 1/4-inch thick
- 2 yukon gold potatoes, sliced 1/4-inch thick
- 2 tablespoon minced garlic
- 1 cup diced shallots
- 1 tablespoon olive oil
- 1 tablespoon dried rosemary
- dash of sea salt
- dash of black pepper
Directions
- Preheat the oven to 350 degrees.
- In a large bowl, mix together the potatoes, garlic, shallots, and olive oil. Transfer to a large baking dish and season with the rosemary, salt, and pepper.
- Place in the oven for 20 minutes. Stir and place back in the oven for 20 more minutes. Enjoy with fish or steak.
