Mixed Veggie And Chicken Quesadilla

Ingredients
- one 13-ounce pouch libby’s mixed vegetables
- 1 tortilla
- 1/2 cup jack cheese, shredded
- 1/3 of a bell pepper, diced
- 1 small grilled chicken breast, diced
Directions
- Microwave Libby’s vegetable pouch according to the package instructions.
- Warm a cast-iron skillet to medium heat.
- Add a small pat of butter to skillet.
- Place the tortilla flat in the skillet.
- On one side of tortilla, layer the jack cheese, mixed vegetables, grilled chicken (diced), and diced red bell pepper.
- Fold over the other side of the tortilla and warm until the tortilla is slightly browned and the cheese has melted.
