Marshmallow-Stuffed Hot Cocoa Cookies

Ingredients
- 8 tablespoon (1 stick) butter
- 1/2 cup brown sugar
- 1/2 cup granulated sugar
- 1 egg
- 1 1/8 cup flour
- 2 packets hot cocoa mix
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 cup dark chocolate chunks, plus more for filling
- 6 large marshmallows, cut in half
Directions
- Step 1: Preheat oven to 350 F.
- Step 2: In a large bowl with a mixer, cream together 8 tablespoons butter, 1/2 cup brown sugar and 1/2 cup granulated sugar. Add 1 egg and mix to combine.
- Step 3: Slowly add 1 1/8 cups flour, 2 packets of hot cocoa mix, 1 teaspoon baking powder and 1 teaspoon baking soda. Mix until combined. Fold in 1 cup of dark chocolate chunks.
- Step 4: Take 1 tablespoon of cookie dough and mold it to make a flat, round circle. Place half of 1 large marshmallow on top of the dough circle, along with a chunk of chocolate. Using another tablespoon of cookie dough, flatten into another round circle and place it on top of the marshmallow and chocolate. Pinch the sides of the dough together so that the marshmallow and chocolate are hidden in the center. Repeat with remainder of dough, marshmallows and chocolate.
- Step 5: Bake for 10 to 15 minutes. Sprinkle with flaked sea salt, if desired.
