In a large bowl, whisk together the aioli, buttermilk, sour cream, onion powder, garlic powder, lemon juice, chives, parsley, and mint until thoroughly combined. Fold in the cheese and season with salt, to taste.
Preheat the oven to 350 degrees.
Place the tomatoes in a baking dish and roast in the oven for 45-55 minutes. When done, remove from the oven and let cool.
Chop up the cooked bacon. Arrange the tomatoes, lettuce, and bacon on plates. Top with the croutons and garnish with the chives and blue cheese.
