- 1/4 cup all-purpose flour
- 2 teaspoon sugar
- 1/4 teaspoon baking powder
- 1/4 teaspoon lemon zest
- 1 teaspoon lemon juice
- 1/2 tablespoon vegetable oil
- 1/4 teaspoon vanilla extract
- 1/4 cup milk
- whipped cream if desired
Directions
- In a large mug, combine all the cake ingredients and mix with a small whisk until smooth.
- Cook in the microwave for about 2 minutes.
- Serve while warm and top with whipped cream and lemon zest.
