4 pouches salmon, such as starkist salmon creations lemon-dill
1/2 cup red bell pepper, diced
1/4 cup cucumber, diced
1/4 cup carrot, diced
3 tablespoon red onion, finely chopped
3 tablespoon sliced almonds, toasted
2 tablespoon chopped parsley
1 tablespoon capers, drained
2 medium avocados, halved and pitted
1/2 fresh lemon
Directions
Combine the salmon, bell pepper, cucumber, carrot, onion, almonds, parsley and capers in a bowl.
Rub the cut side of each avocado with the lemon half and set each on a serving plate. Spoon the salmon salad onto the avocado allowing any extra to cascade onto the plate.
