Lemon-Dill Salmon Salad In Avocado Bowls

Ingredients
- 4 pouches salmon, such as starkist salmon creations lemon-dill
- 1/2 cup red bell pepper, diced
- 1/4 cup cucumber, diced
- 1/4 cup carrot, diced
- 3 tablespoon red onion, finely chopped
- 3 tablespoon sliced almonds, toasted
- 2 tablespoon chopped parsley
- 1 tablespoon capers, drained
- 2 medium avocados, halved and pitted
- 1/2 fresh lemon
Directions
- Combine the salmon, bell pepper, cucumber, carrot, onion, almonds, parsley and capers in a bowl.
- Rub the cut side of each avocado with the lemon half and set each on a serving plate. Spoon the salmon salad onto the avocado allowing any extra to cascade onto the plate.
