John Legend's Fried Chicken Wings With Spicy Honey Butter

Ingredients
  • 10 cup cold water
  • 8 tablespoon seasoned salt, preferably lawry’s
  • 2 1/2 tablespoon garlic powder with parsley, preferably lawry’s
  • 3 tablespoon red pepper, ground
  • 5 pound chicken wings
  • 4 cup flour
  • canola oil, for frying
  • 1 stick unsalted butter, melted
  • 4 tablespoon hot sauce
  • 2 tablespoon honey
  • 3/4 teaspoon kosher salt
Directions
  1. Mix together water, 6 tablespoons of the seasoned salt, garlic powder, 2 tablespoons of red pepper in a large container. Add the chicken and cover the container. Refrigerate for at least 4 hours. Mix flour, remaining seasoned salt, and 1 tablespoon red pepper in a large bowl until well blended. Remove the wings from the brine. Coat the wings, a few pieces at a time, in the seasoned flour. Pour oil into a large deep skillet or Dutch oven, filling it no more than 1/3 full. Heat the oil to 360 degrees F over medium heat. Add the wings to the hot oil in batches. Fry each batch for 10-12 minutes, turning halfway through, until golden brown and crispy. Drain on paper towels. Mix the butter, hot sauce, and honey in a large bowl until well blended. Season with salt to taste. Add wings to the sauce and toss to coat.
