Jessica's Recipe For Edible UV-Reactive Glowing Tonic Gel
This recipe from Jessica Leigh Clark-Bojin of Piescrapers is a great way to up the ante when it comes to you pies. Add it to your finished pies for a crazy glow-in-the-dark effect!

Ingredients
- 1 cup plain tonic water
- 1/2 cup sugar
- 1/4 teaspoon salt
- 1/2 tablespoon agar-agar
- 1/2 teaspoon lemon juice (or other extract flavoring)
Directions
- Combine all ingredients in saucepan and stir constantly until boiling.
- Remove from the heat, transfer to heat-safe bowl, and chill 30 minutes.
- Stir until sufficiently soft to permit you to suck up with a syringe or pipette.
- Pipe onto desired cool surface. Mixture will re-congeal in about 30 minutes.
- Ideal pairing: cherry or citrus flavored pies.
