Jennifer's Mexican Cauliflower Rice

Ingredients
  • 4 cup cauliflower florets
  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 3 to 4 cloves of garlic, minced
  • 28 ounce low-sodium whole peeled tomatoes, chopped
  • 1 teaspoon chili powder
  • 1 teaspoon cumin
  • ¼ cup fresh cilantro, chopped
  • 1 teaspoon fresh lime juice
Directions
  1. Place cauliflower florets in food processor and pulse until it is rice-like consistency.
  2. Heat the olive oil over medium heat. Add onion and garlic. Sauté until onions are soft.
  3. Add cauliflower, tomatoes, chili powder and cumin. Bring to a simmer.
  4. Cook for ~20 minutes or until cauliflower is soft.
  5. Garnish with cilantro and drizzle lime juice prior to serving.
