- 1 can chickpeas, drained and rinsed
- 2 roasted red peppers, roughly chopped
- 1 jalapeno, diced
- 1 garlic clove
- 1/2 teaspoon cumin
- 2 tablespoon tahini
- 2 tablespoon extra virgin olive oil
- 2 tablespoon fresh lemon juice
- paprika, for garnish
- salt and pepper, to taste
- 1 cucumber, sliced into 1-inch circles
- Place all of the ingredients in the food processor and blend until smooth.
- Spread the hummus on top of the sliced cucumber and serve in a serving plate.
