Ingredients
- 1 1/2 cup lemon juice
- lemon zest from one lemon
- 1/4 cup honey
- 2 1/2 cup extra virgin olive oil
- salt, to taste
- pepper, to taste
- pinch of dry mint
- 18 diced one-inch square watermelon pieces
- 1/4 avocado, diced
- pinch of chiffonaded mint
- 1 ounce mint vinaigrette
- 2 tablespoon crumbled feta
- 2 tablespoon marcona almonds, chopped
- 1 tablespoon pearl onions, sliced
- 4 arugula leaves
- salt, to taste
- pepper, to taste
Directions
- Combine everything in a blender until well blended.
- For the watermelon, cut into 1-inch pieces and toss with diced avocado, mint, and vinaigrette. Plate the watermelon and avocado and garnish with the feta, nuts, onion, arugula, and salt and pepper to taste.
