- 2 bunches golden beets, tops and roots removed
- ΒΌ cup extra virgin olive oil
- kosher salt and ground black pepper
- Prepare a chimney of Kingsford Original Charcoal. Once the charcoal is 70 percent ashed over and glowing red, spread it evenly across the bottom of the grill. Add 2-3 chunks o0f your favorite smoking wood to the charcoal for a deep, smoky flavor and close the bottom vents by 1/3 for medium-high heat cooking (approximately 350 degrees).
- Place beets on the grill, add cover and allow the beets to roast for approximately 1 hour until tender, turning every 15 minutes to allow for even cooking. Remove beets from the grill and cool for 10 minutes before removing the outer skin by hand. Cut beets in to 3/4 inch slices, drizzle with the remaining extra virgin olive oil, season with salt and pepper to taste, and serve.
