Ingredients
- spray oil
- 1 medium onion, finely chopped
- 1 tablespoon grated fresh ginger
- 2/3 cup water
- 1 medium pear, cored and finely chopped
- 2 tablespoon no-calorie granulated sweetener
Directions
- Lightly spray a medium saucepan with spray oil.
- Add onion, ginger and a pinch of salt.
- Cook over medium heat 5–7 minutes, or until tender, stirring occasionally.
- Add cranberries and 2/3 cup water.
- Bring to a boil.
- Reduce heat and simmer gently 4 minutes, or until cranberry skins pop and mixture thickens slightly, stirring occasionally.
- Transfer to a bowl. Let cool to room temperature, about one hour.
- Stir in pear and no-calorie granulated sweetener.
