Fluffy Yogurt Pancakes With Honey Nut Granola
Recipe Courtesy of Sweet Home FarmWith 3 grams of fiber and 6 grams of protein per serving, this take on pancakes will be your new Sunday morning ritual. The garnish of granola adds a honey nut crunch to balance out the light, yogurt pancakes.

Ingredients
- 1 cup all-purpose flour
- 2 tablespoon granulated sugar
- 1 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 3/4 cup milk
- 1/2 cup low-fat plain yogurt
- 1 egg, lightly beaten
- 3 tablespoon vegetable oil
- 1/2 cup granola, such as sweet home farm honey nut granola
Directions
- In large bowl, whisk flour, sugar, baking powder, baking soda and salt.
- In separate bowl, whisk milk, yogurt, egg and 1 tbsp of the vegetable oil.
- Stir into flour mixture just until combined. Fold in granola.
- Lightly brush large nonstick skillet with some of the remaining oil; heat over medium heat.
- Using scant ¼ cup of batter per pancake, pour four pancakes into skillet.
- Cook for about 2 minutes or until bubbles appear on top and bottom is golden brown.
- Flip and cook for about 1 minute or until bottom is golden brown.
- Repeat with remaining batter and oil.
