Falafel And Hummus Pita

Ingredients
  • 1 package stonefire original or whole grain pita
  • 1 cup homemade or store-bought hummus
  • ½ cup sliced black olives
  • 2 cup shredded lettuce
  • 12 slices ripe tomato
  • ½ cup red onion, thinly sliced
  • 12 homemade or store-bougth falafel balls, warmed
  • salt and pepper to taste
Directions
  1. Remove the pita from package, warm following directions on back of package.
  2. Cut the pitas in half and gently split each half to create 8 pockets.
  3. Fill each pocket with the hummus, falafel balls, sliced red onion, shredded lettuce, sliced tomatoes and sliced black olives. Season to taste.
  4. Serve immediately.
