- 1 small or medium beet
- 3 cup coconut water
- 1 lemon
- 1 small piece of ginger
- 1/2 large pomegranate or whole small pomegranate
- Juice beet, ginger, and lemon (without peel). Mix with coconut water.
- Add in seeds from pomegranate.
- Pour into ice pop molds or plastic cups with sticks.
- Freeze for minimum of 4 hours and keep up to 6 months. Remove from mold and enjoy!
