Ingredients
- ½ pound shrimp, peeled and deveined
- 1 teaspoon dried basil
- salt and pepper, to taste
- 2 tablespoons olive oil
- 1 clove garlic, minced
- juice of 3 lemons
- 3 medium avocados
- 2 tablespoons chopped cilantro
- ½ pound mixed salad greens
Directions
- Season shrimp with dried basil and salt and pepper. Set aside.
- Heat olive oil in the pan over medium heat.
- Add shrimp and cook for 2 minutes.
- Add garlic to pan and turn shrimp over. Cook for approximately 2 more minutes, until garlic is fragrant and shrimp are opaque and curled slightly.
- Deglaze pan with lemon juice. Remove pan from heat and transfer shrimp to a plate. Reserve pan drippings.
- Place avocados, cilantro, and pan drippings in a food processor or blender. Blend until creamy.
- Toss shrimp, avocado mixture, and greens together.
- Serve immediately.
