Slice the bread into four large pieces and make a slit through one side of each piece.
Stuff the banana slices into each piece of bread.
In a medium-sized bowl whisk the eggs, milk, sugar, cinnamon, and vanilla. Take your stuffed bread and dunk it into the mixture, making sure the whole thing is coated.
In a large skillet, add the vegetable oil and heat on a medium flame. Add your battered bread and sear until the toast is golden all over.
Drain the excess batter from your toast on a wire rack.
In a large shallow bowl, add your cinnamon sugar and toss the warm toast in it, making sure it's heavily coated.
In a small saucepan over medium heat, add the strawberries, sugar, lemon zest, lemon juice, star anise, and vanilla extract. Bring the mixture to a light simmer for about 10 minutes.
After the mixture has thickened and the strawberries have broken down, remove from the heat. Remove the star anise and mash the remaining strawberries until they become smoother.
Garnish your toast with the strawberry jam, fresh strawberries, and maple syrup.
