Ingredients
- 1 cup butter, such as country crock spread
- 2 cup granulated sugar
- 4 large eggs
- 1/3 cup milk
- 2 teaspoon vanilla extract
- 3 cup all-purpose flour
- 1 tablespoon baking powder
- 1 pound confectioners sugar
- 1/2 cup butter such as country crock spread
- 1 teaspoon vanilla extract
- red or blue food coloring
Directions
- Preheat oven to 350 degrees F. Line 20 muffin cups with paper cupcake liners; set aside.
- Combine Country Crock® Spread, sugar, eggs, milk and vanilla in large bowl with wooden spoon. Stir in flour and baking powder until blended. Evenly spoon batter into prepared pans.
- Bake 20 to 25 minutes until toothpick inserted in centers comes out clean. Cool on wire rack 10 minutes. Remove cupcakes from pans and cool completely.
- For the frosting, beat all ingredients in large bowl with electric mixer until smooth and fluffy, about 3 minutes. Stir in 1 drop red or blue food coloring to tint frosting. Evenly spread frosting on cupcakes.
