Coconut Oil Sweet Potato Chips
A healthy alternative to store-bought potato chips, make these sweet potato chips with coconut oil and a guilt-free snack. For the spice blend, use a combination of spices like garlic powder, onion powder, and thyme, or whatever you’re in the mood for! Recipe courtesy of Vita Coco.

Ingredients
- 2-3 tablespoon coconut oil, such as vita coco
- 2-3 large sweet potatoes sliced 1/8- to 1/4-inch thick, with skin or without
- 2-3 teaspoon spice blend
Directions
- Preheat the oven to 350 degrees F.
- Melt 1 tablespoon of the coconut oil. Toss the sliced sweet potatoes and in a bowl with the melted Vita oil and season with the spice blend.
- In an oven-safe sauté pan, heat over medium heat then add the remaining 2 tablespoons of the oil and, working in batches, cook the sweet potatoes on either side until they begin to take on some color.
- Transfer to the oven and bake until they are cooked throughout, 12 minutes. Remove from oven and place in a dish; serve warm.
