Classic Potato Pancakes
There are many different versions of the potato pancake from around the world. This is my favorite version of the classic. I like to eat it with sourcream and applesauce, or opt for yogurt if you want something healthier.

Ingredients
- 1 pound russet potatoes, grated
- 1/2 onion, grated
- 1 egg
- 1/4 cup bread flour
- 1/2 teaspoon salt
Directions
- Combine all the ingredients.
- In a cast iron pan, on medium heat, fry the pancakes until golden brown.
- Serve with sour cream and applesauce.
