Ingredients
- 4 quarts popcorn
- 1 cup brown sugar
- 1/2 cup light or dark corn syrup, preferably karo
- 1/2 cup butter
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 1 teaspoon pure vanilla extract
- 1 cup peanuts, optional
Directions
- Spray large, shallow roasting pan with cooking spray.
- Add popcorn into pan and place in oven preheating to 250 degree F while preparing glaze.
- In a heavy 2-quart saucepan, combine brown sugar, corn syrup, butter, and salt.
- Stirring constantly, bring to a boil over medium heat.
- Boil 5 minutes without stirring.
- Remove from heat.
- Stir in baking soda and vanilla, and mix well. Mixture will foam.
- Pour syrup over warm popcorn mixture, stirring to coat well.
- Bake for 45 minutes, stirring occasionally. Remove from oven.
- Spread on foil that has been sprayed with cooking spray.
- Cool and break apart baked popcorn mixture.
- Add 1 cup peanuts, if desired. Store in tightly covered container.
