- 7 cup oats, rolled
- 1/4 cup chocolate chips
- 1/4 cup flax seeds
- 1/2 cup pecans, chopped
- 1/4 cup pine nuts
- 1/4 cup almonds, chopped
- 1 1/4 cup olive oil
- 1 1/4 cup maple syrup
- 1 1/2 teaspoon cinnamon, ground
- 1/8 teaspoon almond extract
- 1/4 teaspoon ginger, dried, ground
- 1/8 teaspoon nutmeg, ground
- 1/3 cup cocoa powder
- In a large bowl, toss together the oats, chocolate chips (first measurement), flax seeds, pecans, pine nuts and almonds.
- In a pot over medium heat whisk together the olive oil, maple syrup, spices, extract and cocoa powder.
- Bring to a simmer whisking well. Add mixture to oat mixture and stir well.
- Put on a sheet pan and bake 20 minutes at 325 degrees. Stir to evenly bake and continue baking about 10 more minutes.
- When out of oven sprinkle last measurement of chocolate chips over the granola and mix on the pan. Let cool on pan.
- Store in an airtight container. Can be stored in the freezer for longer storage.
