Chocolate Nut Granola

Ingredients
  • 7 cup oats, rolled
  • 1/4 cup chocolate chips
  • 1/4 cup flax seeds
  • 1/2 cup pecans, chopped
  • 1/4 cup pine nuts
  • 1/4 cup almonds, chopped
  • 1 1/4 cup olive oil
  • 1 1/4 cup maple syrup
  • 1 1/2 teaspoon cinnamon, ground
  • 1/8 teaspoon almond extract
  • 1/4 teaspoon ginger, dried, ground
  • 1/8 teaspoon nutmeg, ground
  • 1/3 cup cocoa powder
Directions
  1. In a large bowl, toss together the oats, chocolate chips (first measurement), flax seeds, pecans, pine nuts and almonds.
  2. In a pot over medium heat whisk together the olive oil, maple syrup, spices, extract and cocoa powder.
  3. Bring to a simmer whisking well. Add mixture to oat mixture and stir well.
  4. Put on a sheet pan and bake 20 minutes at 325 degrees. Stir to evenly bake and continue baking about 10 more minutes.
  5. When out of oven sprinkle last measurement of chocolate chips over the granola and mix on the pan. Let cool on pan.
  6. Store in an airtight container. Can be stored in the freezer for longer storage.
