Chocolate Cookie Cheesecake
Ingredients
  • 1 1/2 cup chocolate wafer cookies, finely crushed
  • 2 tablespoon sugar
  • 1/4 cup melted butter
  • 16 ounce cream cheese, cubed
  • 3/4 cup plus 2 tablespoons sugar
  • 1 cup sour cream
  • 3 eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1/4 cup sugar
  • 2 tablespoon water
  • 1 teaspoon vanilla extract
  • 1 cup semisweet chocolate chips
  • 1/2 cup all-purpose flour
  • 1 cup sour cream
  • 2 teaspoon white sugar
  • 1 teaspoon vanilla extract
Directions
  1. Preheat the oven to 350 degrees F.
  2. Mix the chocolate wafer cookie crumbs, sugar, and melted butter together in a bowl. Press firmly into the bottom and ½-inch up the sides of a 9-inch springform pan. Bake the crust for 8 minutes, until set.
  3. Beat the cream cheese and sugar together until creamy. Add sour cream, eggs, and vanilla extract. Beat until batter is smooth. Pour batter over the crust.
  4. Beat butter and both sugars together. Stir in water and vanilla extract. Add chocolate chips and flour, and mix until well combined. Drop cookie dough in 2 tablespoon portions over the top of the cheesecake, pushing the dough into the batter.
  5. Bake in the preheated oven for about 40 minutes, until the cheesecake is almost set, but wobbles slightly in the middle when shaken.
  6. Combine sour cream, sugar, and vanilla together until smooth. Spread over the hot cheesecake. Cool to room temperature and refrigerate for at least 4 hours, until cold, before serving.
