- 1 1/2 cup chocolate wafer cookies, finely crushed
- 2 tablespoon sugar
- 1/4 cup melted butter
- 16 ounce cream cheese, cubed
- 3/4 cup plus 2 tablespoons sugar
- 1 cup sour cream
- 3 eggs
- 1 teaspoon vanilla extract
- 1/4 cup butter, softened
- 1/4 cup brown sugar
- 1/4 cup sugar
- 2 tablespoon water
- 1 teaspoon vanilla extract
- 1 cup semisweet chocolate chips
- 1/2 cup all-purpose flour
- 1 cup sour cream
- 2 teaspoon white sugar
- 1 teaspoon vanilla extract
Directions
- Preheat the oven to 350 degrees F.
- Mix the chocolate wafer cookie crumbs, sugar, and melted butter together in a bowl. Press firmly into the bottom and ½-inch up the sides of a 9-inch springform pan. Bake the crust for 8 minutes, until set.
- Beat the cream cheese and sugar together until creamy. Add sour cream, eggs, and vanilla extract. Beat until batter is smooth. Pour batter over the crust.
- Beat butter and both sugars together. Stir in water and vanilla extract. Add chocolate chips and flour, and mix until well combined. Drop cookie dough in 2 tablespoon portions over the top of the cheesecake, pushing the dough into the batter.
- Bake in the preheated oven for about 40 minutes, until the cheesecake is almost set, but wobbles slightly in the middle when shaken.
- Combine sour cream, sugar, and vanilla together until smooth. Spread over the hot cheesecake. Cool to room temperature and refrigerate for at least 4 hours, until cold, before serving.
