This light, beautiful salad is the perfect dish to fuel your summer dining. Sea salt makes for a perfect accompaniment in this salad dressing, balancing out the zesty citrus flavors.This recipe is courtesy of Morton Salt.

Ingredients
  • 3 cup olive oil
  • 2 tablespoon honey
  • 1 lemon, juiced and zested
  • 1 teaspoon dijon mustard
  • 1/4 cup capers
  • 3 anchovies
  • 1/8 teaspoon morton fine sea salt
  • 6 heads little gem lettuce, washed
  • 1/4 cup fingerlings, cooked and thinly sliced
  • 1 cup shaved red onion
  • 1 cup blue crab meat (can substitute tuna)
  • 1 green beans, blanched and cut into 1 inch pieces
  • 1 red pepper, 1/8-inch diced
  • 2 lemons, zested
  • 1/8 cup chives, neatly chopped
  • 3 eggs, hard boiled and chopped
  • 1 teaspoon morton coarse sea salt
  • 1 teaspoon pepper
Directions
  1. Combine lemon juice, zest, honey, Morton Fine Sea Salt, and Dijon mustard in a blender. Start on the low setting and slowly drizzle in olive oil.
  2. Add the capers and anchovies.
  3. In a mixing bowl, combine all the ingredients for salad and add dressing.
  4. Serve in a chilled bowl.
